Coconut Sambol

Ingredients

Desiccated coconut - 1 cup

Onian - finely chopped - 1

Hot chili powder - 3 teaspoons

Salt - to taste

Lemon juice - to taste

Moldive fish (optional) - 2 teaspoons

Method

Mix well all the ingredients except Desiccated coconut and lemon juice. then combine Desiccated coconut and lemon juice. mix well with hands rubbing all the ingredients together. serve with rice and curry, bread or string hoppers.

Shrimp Sambol

Ingredients

Desiccated or Grated coconut - 1 cup

Dried Shrimp - 4 tablespoons

Onians finely chopped - 1

Salt - to taste

Lemon juice - to taste

Red chilies Finely choped - 4

Turmeric - 1/2 teaspoon

Water - 1/2 cup

Curry Leaves - 4

Method

Add all the ingredients except coconut in to a saucepan and cook, covered for 20 minutes. Add coconut and simmer until coconut absorbs all the liquid. Serve with rice and curries.
